Easy Chicken Spaghetti
4 boneless, skinless chicken breasts
1 onion, chopped, microwave covered until translucent
1 (4 oz.) can mushrooms sliced and drained
1 can 98% fat free cream of celery soup
1 can 98% fat free cream of mushroom soup
1 c. 1% milk
1/2 lb. Velveeta cheese made with 2% milk
1 13.25 oz. whole wheat blend pasta thin spaghetti, cooked
Boil Chicken until well done, cut into bite size pieces. Mix soup with milk, add cheese; stir until melted. Add onions, mushrooms, chicken, and spaghetti. Salt and pepper to taste. Spray a 9 x 13 casserole with cooking spray and pour in mixture. Bake, uncovered, 35 minutes at 350 degrees. Freezes well.
Salsa Chicken
4 boneless, skinless chicken breasts, or several strips of chicken
1 1/2 cup mild salsa
1 two cup pkg. 2% or fat free shredded cheddar cheese
Preheat oven to 350 degrees. Spray a 2 qt. covered casserole with cooking spray. Place chicken into dish. Pour salsa over chicken, bake until tender. Remove lid from dish and add cheese. Return to oven and bake until cheese is melted.
